Birria is a dish that originated in San Martin Hidalgo in the state of Jalisco. It’s a highly popular dish in Mexico that has spread to other states in Mexico and around the world! The original recipe has goat or beef marinated with ground chiles and left to rest for several hours and baked in an underground oven. The birria that we make here at Marlo is made with beef brisket and traditional ingredients brought in from Mexico. We marinate our birria for 24 hours then bake it for 5 hours at a low temperature to obtain great flavours and textures. We serve our birria meat on tortillas that we make fresh in house everyday using yellow bolita corn that has been nixtamalized, resulting in tortillas that are as hand made as they come. The tortilla is dipped in birria fat, left to cook on our grill to crisp up and is filled with cheese, our birria meat, fresh onion and cilantro. We serve our birria tacos with a side of consomme, which is essentially the birria braising liquid strained off and saved to be used as a delicious dip for the taco.
